I re-discover this each August/September. I've had this for dinner the last two nights and am planning on eating it again tonight.
Ingredients:
Spaghetti or other pasta
The freshest, ripest tomato you can find (Tennis ball size is about right for two people.)
Olive Oil
Thyme (fresh if you've got it, mine died this year :( so I'm using dried whole leaves)
Parmesan cheese
Start your pasta water boiling and before dropping in the pasta, drop in the the tomato for a few seconds to loosen the skin.
Skin and dice the tomato. Then place it in a large bowl, drizzle with olive oil and crushed thyme. Use a fork to crush the tomato a bit. Let sit while the pasta cooks.
Drain the pasta and pour it over the tomato mixture. Mix in shredded parmesan cheese to taste.
It's great with a fairly dry rose' wine.
